Pancakes are one of those wonderfully comforting foods that you can eat anytime. Whether for breakfast, lunch, brunch, or a special dessert, homemade pancakes never fail to impress.
But how do you make pancakes?
Do you have an old tried-and-tested recipe handed down by your mum or grandma, or are you happy to jump online and use the first one that pops up? The problem with the latter is that; if you haven’t used it before, how do you know your pancakes will be successful?
Not only do you not want to waste a whole lot of ingredients, but you don’t want to disappoint all of those hungry people waiting to dive in and eat.
So unless you have an inherited famous recipe, here is our take on how to make pancakes the no-risk way! Not soggy and broken but light, fluffy, and yummy. One of the secret ingredients that help with making them fluffy and light is baking powder, so don’t miss this out of the recipe.
As for how to serve your lush homemade pancakes, go for sweet or savory as both work equally well. Some favorite toppings are maple syrup, strawberries, banana, melted chocolate, ice cream, blueberries, blackberries, and even a mix of fruit.
If you like bacon, then add a few crispy slices alongside the maple syrup.
Pancake recipe
This pancake recipe serves four people and should make about 12 pancakes.
For the ingredients, you are going to need:
- Plain flour – 200g
- Baking powder – 1 tablespoon
- Sugar – 1 tablespoon
- Salt – just a pinch
- Milk – 200ml
- Egg – 1
- Butter – 25g melted
- Vegetable oil – small amount for cooking
How to make pancakes
Get all of your ingredients and utensils together. Sieve the dry ingredients – baking powder and flour – into a mixing bowl. Stir in the salt and sugar.
Make a dip in the center of the dry ingredients and add very gradually then milk, egg, and melted butter (if mix all of these together in a jug, it is much easier). Keep mixing until all of the wet ingredients are added.
Now beat everything together using a hand or electric whisk until you have a smooth batter.
Cooking your pancakes
You can use a large non-stick frying pan if you want to cook several at a time or a small one-pancake-sized pan to make them individually. Heat the pan until hot, having added a small amount of vegetable oil and a knob of butter.
Once it is very hot, begin to ladle in the batter. If you have several in one pan, don’t let them stick together. They should bubble and begin to form a round shape instantly. Cook on one side until you see bubbles appearing on the surface of the batter. Once this happens, flip with a non-stick spatula and cook on the other side for just a minute or two, until golden brown.
If your pan is hot enough, they will cook quickly so watch they don’t burn!
Eating your pancakes
As they cook, put them to one side on a warm plate and begin stacking them up. Once they are all cooked, get them on the table to eat while warm. You should have already spread out all of the topping ideas so people can tuck in immediately.
